French Toast Casserole with Berry Compote

Everyone loves French Toast, and the berry compote adds a sweet – and colourful! – touch that works well for brunch or special occasions. Enjoy this ‘tested till perfect’ recipe from CanadianLiving.com.

 

Preparation time: approx. 40 minutes (make-ahead up to 12 hours earlier.) Cook time: 5-7 minutes
Ingredients

  • 1 cup milk
  • 1 cup 10% cream
  • 6 eggs
  • 1-1/2 tsp finely grated orange rind
  • 3/4 tsp vanilla
  • 16 thick slices Italian bread
  • 1/4 cup unsalted butter

Berry Compote Ingredients

  • 2 cups thawed or fresh blueberries
  • 1/2 cup granulated sugar
  • 2 tbsp orange-flavoured liqueur or orange juice
  • 1/4 cup orange juice
  • 2 tsp cornstarch
Makes 8 servings
Method: In large bowl, whisk together milk, cream, eggs, orange rind and vanilla. Dip bread into mixture, turning to coat. Place in two 13- x 9 -inch (3 L) glass baking dishes; pour any remaining mixture over top. Let stand until absorbed, about 30 minutes. (Make-ahead: Cover and refrigerate for up to 12 hours.)In large skillet, melt 1 tbsp (15 mL) of the butter over medium heat; fry 4 bread slices, turning once, until golden. Transfer to parchment paper–lined baking sheet. Repeat with remaining bread. Bake in 350°F (180°C) oven until puffed, 5 to 7 minutes.

Berry Compote: Meanwhile, in saucepan, combine blueberries, raspberries, sugar and liqueur. In small bowl, mix orange juice with cornstarch; add to saucepan and cook over medium-low heat, stirring constantly, until thickened, about 5 minutes. (Make-ahead: Refrigerate in airtight container for up to 24 hours. Rewarm to serve.) Serve with baked toast.

Eggs. This popular food is so mainstream, and so easy to cook or bake with, that there’s not much ‘mystery’ to eggs, right? Wrong!

You may be very surprised by these five egg facts.

 

 

  1. The shell of an egg has about 10,000 tiny pores – These pores allow gases to move in and out of the egg. That’s why EverythingEggs.ca says that: “eggs should be stored in their carton in the refrigerator to prevent the absorption of odours from strong-smelling foods.”
  2. There is no nutritional difference between white and brown eggs – So unlike brown bread or brown rice, for example, brown eggs do not have superior dietary benefits. Egg colour is typically due to the breed of the hen: white-feathered hens lay white eggs while brown-feathered hens lay brown eggs.
  3. Place an egg in water to see if it’s fresh – Although it’s easier to simply check the Best Before date stamped on the egg carton, this ‘fresh test’ is way more fun! Dunk some eggs in a bowl of water: a fresh egg will sink but an old egg will float due to air absorption through its shell. That’s EGG-traordinary!
  4. Eggs come in 6 different sizes – Amazingly, there are six different sizes of eggs. The different size classifications are based on individual egg weight (not egg size). According to the folks at EverythingEggs.ca, the classifications are:
  • Peewee eggs – less than 42 g
  • Small eggs – at least 42 g
  • Medium eggs – at least 49 g
  • Large eggs – at least 56 g
  • Extra large eggs – at least 63 g
  • Jumbo eggs – 70 g or more

5. There are 10 different types of eggs– yes, those ‘everyday’ egg have many different varieties! They range from Omega-3 Eggs (which contain a higher level of omega-3 polyunsaturated fatty acids for heart health) to Free Range (eggs produced by hens allowed to roam freely inside and outside) to Vegetarian eggs (eggs laid by hens fed an all-vegetarian diet). Puffy Pizza Omelette

Preparation time: approximately 12 minutes  Cook time: 17 minutes
Ingredients

  • 6 eggs
  • 2 tbsp (30 mL) all-purpose flour
  • 1 tsp (5 mL) dried oregano
  • 1/4 tsp (1 mL) each, salt and pepper
  • 1 cup (250 mL) 10% half-and-half or 18% table cream
  • 1 tbsp (15 mL) butter
  • 1 small oblong potato, peeled and shredded
  • 2 cups (500 mL) sliced mushrooms
  • 1/2 sweet green pepper, chopped
  • 1/2 cup (125 mL) chopped smoked ham (optional)
  • 1 plum tomato, sliced
  • 1/2 cup (125 mL) shredded Canadian Mozzarella or Provolone cheese
Makes 4 servings
MethodPreheat the broiler with rack positioned 6 inches (15 cm) from heat. In a bowl, whisk eggs with flour, oregano, salt and pepper; whisk in cream until blended.In a large nonstick skillet, melt butter over medium-high heat; add potatoes, mushrooms, green pepper and ham (if using); sauté for 8 min or until mushrooms release their liquid and start to brown and potatoes are tender.Reduce heat to medium-low and pour in egg mixture. Cook, stirring gently with a heatproof spatula for about 2 min or until eggs are about half set. Cook without stirring for 3 min or until eggs are almost set.Broil for about 3 min or until omelette is puffed and browned. Arrange tomatoes on top of omelette and sprinkle with cheese; broil for 1 min or until cheese is melted.

  • Hollandaise Sauce: In heatproof bowl over saucepan of simmering water, whisk egg yolks until thick enough to coat back of spoon, about 4 minutes. Remove from heat. Whisk in butter, 2 tbsp (25 mL) at a time, until thickened; whisk in lemon juice, salt and cayenne. Keep warm over hot water.Pour enough boiling water into skillet to come 3 inches (8 cm) up side; return to boil. Add vinegar; reduce heat to gentle simmer. Break each egg into small dish; gently slip into simmering water. Cook until desired doneness, about 5 minutes for soft yolks and firm whites. Remove with slotted spoon and drain well, patting bottom of spoon with towel to dry egg.Meanwhile, cut muffins horizontally in half and toast; place 2 halves, cut side up, on each plate. Top each with ham, poached egg and 2 tbsp (25 mL) Hollandaise Sauce.

  3. Smoked Turkey Eggs Benedict
    Replace ham with smoked turkey; sprinkle with 1/4 cup (50 mL) chopped sweet red pepper.
    Peameal Bacon Eggs Benedict: Replace ham with sautéed peameal bacon.
